Shake It Up

I have to say with the extra sleep I got this past holiday weekend, Tuesday was a-ok and pretty productive. Ryan and I had every intention of waking up for a 7am walk around the neighborhood, however that didn't exactly happen. Tomorrow, I swear!

I kicked off my morning with my first Vega Shake and Go. I received a package at the Healthy Living Summit last month and was inspired to finally try it after Allie at Live Laugh Eat recently mentioned having one. I tried the Choc-a-lot version and it was positively yummy. Each shake includes two servings of veggies, 2500 mg Omega-3-6-9, and 11 grams of protein. It's also gluten-free, dairy-free, and 65% organic. Not bad, right? Super easy to make with two heaping helpings plus water. I paired my shake up with one scrambled egg with chives and berries. An iced coffee was close by, too. :)


It was me and my elliptical trainer for 45 minutes later this morning. Boy, if I miss a couple of days, I somehow ended up paying for it. Haha! Anyhow, I feel like I really earned the last five minutes today. Certainly well worth the sweat and hard work. Lunch kind of snuck up on me, too, and with the extended holiday Ryan and I were a day behind in meal prep. Aaaagh! I headed up to Whole Foods to pick up a few things and grabbed some lunch from the hot and cold bars. The walk home was absolutely lovely, with not a cloud in the sky. But the Windy City's namesake was in full effect with some crazy wind, too. Yikes!

I picked up my favorite Tomato and Basil Soup with some mixed greens and vegetables. I also tried Whole Foods' French Greens Beans with Herbs and Sesame Cucumber Salad. Awwwwesome lunch!


For dinner, I brought back one of our oldies but goodies from Ellie Krieger: Baked Shrimp with Tomatoes and Feta. I seriously cannot get enough of tomatoes and this is a hearty dish where the tomato is the true star, with fresh dill and parsley mixed in. I also had spinach salad with shredded carrots, cucumber, and kalamata olives.


You know I can't pass up having dessert, so I had my last two vanilla marshmallows from Zingerman's (Thank you Rittballa!). If you're not familiar with Zingerman's, do yourself a favor and check 'em out. They are AMA-ZING! With living in Ann Arbor for seven years, I frequented the deli, the bakehouse, and the roadhouse and Pat and Dick’s Honeymooner was my go-to sandwich from the deli. Its to-die-for mix of smoked turkey breast, Wisconsin muenster, and sweet-hot honeycup mustard on grilled challah bread makes it the most incredible sandwich ever. I'm serious!

Ok, I'm getting carried away here. The vanilla marshmallows are made of sugar, egg white, gelatin, and mexican vanilla bean and are absolutely fabulous at 60 calories each. Like it says on the bag, they're "lighter than air with a vanilla flair." I am going back to Michigan in two weeks and you better believe I'm making a stop at Zingerman's Bakehouse to pick me up some vanilla AND chocolate marshmallows.


As for Wednesday, I have volunteer training with Open Books and a punk rock show with Young Widows at night.  What do you have planned? Thanks so much for reading! xx

  2. I'm definitely going to check out the Vega shakes. A great alternative to ice coffee probably, right? Have fun at the Open Books orientation! PS...those marshmallows look like cubes of butter! Tastes great, less filling, I'm sure. :)

  3. I could eat at Whole Foods everyday for every meal! Never get sick of all the options they have available.
    If there was 1 food I could choose to like (that I currently don't like) it would be tomato. If I liked tomatoes it would make ordering at restaurants so much easier, which my husband would appreciate;)

  4. I am REALLY wanting that tomato soup from WF. And my favorite hometown dessert is handmade carrot cakae ice cream from a local shop, it's to die for!
